Below are last months faves for Cooking, Art, Reading, and Enthusiasm/ what’s bringing me joy lately.
🌿🥔 Cooking: Pesto Potatoes
This is my current hyper-fixation.
I literally make these and will eat for breakfast, lunch, and dinner until I run out and have to make them again.
They’re so easy and so perfect paired with 2 fried eggs for breakfast or topped with your fave protein for lunch or dinner (steak, chicken, salmon, whatever…)
Pesto Potatoes 🌿🥔
Ingredients:
- Potatoes — as many as you want to make (I use Yukon gold most often, but I’d make this with any potatoes I have on hand)
- Tallow — enough to coat potatoes
- Optional: fresh arugula to top
HOMEMADE PESTO:
- A bunch of fresh basil
- 1-2 tbsp of pistachios (I also throw in some pumpkin seeds)
- ¼ cup grated parmigiana
- 4 tbsp EVOO
- 1 tbsp lemon juice
- 3 garlic cloves
- S + P

Directions:
1. Preheat oven to 375
2. Peel and cube potatoes
3. Scatter on a nontoxic sheet pan and coat with tallow
4. Bake on the top rack in the oven until crispy (go in and flip with a metal spatula halfway through the cooking process.
5. Blend all ingredients to make pesto
6. Take cooked potatoes out of the oven and coat in pesto
7. Enjoy as is or topped with your choice of protein and arugula from the garden 🪴

I lean towards a minimalist lifestyle so when we can make something from scratch using materials we already have and it turns out to be super useful… I’m obsessed.
I find myself sitting out here often now and it’s so peaceful. The perfect spot to write and receive new creative ideas.
💎 Reading: Fiction novels by Emily Giffin
This month I’m doing a bit more reading purely for the joy of story.
I love fiction but I find it so challenging to pick out fiction books because I’m very picky with them. I’m really not into the popular fantasy craze- type books and I find most fiction stories either completely enjoyable or just dumb.
I picked up the book “Something Blue” in one of those super cute book exchange mailboxes at my local farm stand and I flew through it.

And since I loved it, I looked into more books from this author and she wrote “Something Borrowed” which is the exact same characters and story as “Something Blue”, but told from the other main character’s perspective. And it was so so good! I loved getting the other side of the story.

🐣 Enthusiasm: New Chicks
We grew the homestead with 4 new chicks and these girlies are super high end compared to our first 4.
They are a lot more interesting and cool looking and they’ll lay colored eggs 🪺
They grow so fast but I’m excited because adult chickens are super easy and mostly self sufficient so as fun and cute as the babies are, it’ll be nice to have them join in with our older 4 chickens soon.
