Does your calendar scream SUMMER this month too?🌻🦋🌊🌞 In June I had two weddings, my own wedding celebration, a baby shower, and my husband's birthday.
I remember times like this in the past where I thought I was doomed to fall off my healthy habits. But with a lifestyle that is truly enjoyable, I’ve noticed that this is the first summer packed full of events where I don’t feel tempted by things that don’t feel good. I naturally lean on my healthy habits to keep me feeling incredible.
Here’s a glimpse at what this week looked like!

Cooking: The Restaurant-Style Breakfast
I call this “The Restaurant-Style Breakfast” because the first time I made it, after the first bite, I looked at Levi with wide eyes and said, “THIS is SO much better than anything I’ve ever had at any restaurant. I don’t understand why anyone would go out to eat if they could make this.” And I can honestly say I’ve never gone out to eat for breakfast ever since.
I’m excited to share this with you now because it is packed full of fresh June produce!
Ingredients:
1 organic, pasture-raised egg
½ avocado
Medley of purple, red, and golden mini potatoes
1 zucchini
1 yellow squash
Garlic powder, paprika, cayenne, onion powder, red pepper flakes, S + P
For the sauce:
½ cup grass-fed plain whole milk Greek yogurt
4 tablespoons sriracha
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
Directions:
Wash potatoes then cut into ½ inch cubes
Heat EVOO or ghee in a large nontoxic pan
When the oil is hot, drop potatoes in and mix so they are fully coated in the oil
Season potatoes and let cook halfway before flipping
Wash zucchini and squash then chop into circular slices before cutting the slices into quarters
Make your sauce by mixing all the ingredients into a bowl
Flip potatoes and season the other side. When potatoes are 90% cooked through, add chopped zucchini and squash
Mix together so each ingredient is coated in oil and seasoning
Heat your oil or ghee in a small pan. Crack egg into hot oil without breaking the yolk
Flip once ¾ cooked and cook until whites are firm, but yolk is still runny
Cut avocado in half then thin strips
Plate your food by serving a generous amount of potato squash mixture
Slide egg on top, half of sliced avocado, and a generous amount of sauce
Break egg yolk and enjoy the mixture of flavors!
I shamelessly enjoy this for breakfast, brunch, and even some weekday dinners because it always hits the spot 🍳
Art: I spontaneously made this birthday card for my husband last week (thought I’d step it up from the usual note on lined paper) and it turned out so cute! So I got excited and started making more.
I just used handmade cotton paper I got on Amazon, a thin Sharpie, and watercolors.
I found designs on Pinterest for inspo. I love doing this in the evenings as a way to relax my mind and rest my eyes after a day full of writing on a screen.
Reading: I’m reading a novel called, Only If You’re Lucky, by Stacy Willingham.
I rarely read novels because I usually don’t feel as drawn into fiction the way I am with memoirs. But I’m so glad I gave this one a chance because it is captivating.
The book is about a group of girls in college who deal with the challenges of young womanhood – wanting to fit in, loyalty to new friendships, living with freedom for the first time. And on top of all that, the book is a bit of a thriller so the girls deal with the death of a friend and then the boy who was last seen with her is killed and one of the girls goes missing after being questioned about his death… I won’t give away any more but I struggle to put it down now that I’m near the end. SO GOOD.
Enthusiasm: I love ballet barre workouts because it burns like pilates but feels so feminine and graceful which makes it a lot more enjoyable.
After over a year of searching, I finally found some free ballet barre classes that are less focused on the burn and prioritize graceful, rhythmic movements that you can get lost in. These classes are taught by Alexis Ren and she shares 7 classes for free that are beautifully done.
I’ve done each of these videos multiple times and they don’t get old. Here’s the link to get access to the ballet videos and their other free resources.
