Have you ever met someone who is constantly talking about their dreams of doing this or that but never actually ends up doing the thing?

They just talk and talk… Until eventually, everyone knows they’re full of it. Including themselves.

So then they likely take their shame and disappointment and turn it into bitterness. Victimhood. Poor me, I don’t have enough money to do what I want to do. Poor me I never met the right people to help me do what I want to do.

Yeah. I think we all know that old person, full of regret and just completely unbearable to be around.

So in the spirit of learning from others, I find that it’s our duty to consciously choose and make choices to ensure that we NEVER become that person.

And that’s what Levi and I are discussing in the newest episode of Cheers to Growth.

We had all these big dream in the beginning of our relationship together, but with me living two hours away from him in an apartment, working full time as an elementary school teacher, and him achieving his goal of buying a house at 21 but working such an insane schedule that he went months and months without ever seeing his home that he worked so hard to get… It kind of just seemed like we were supposed to settle in there.

We both had careers that were fine enough. We were both healthyish enough. We went on weekend trips all the time to try to show off and pretend to ourselves and the world that we were thriving. But we both knew that we were not truly living up to our potential.

Instead of spending all our free time talking and talking and talking to each other about all our big dreams, it might actually serve us to start taking steps towards the life we want together.

It all happened so fast and I look back at us just a very short few years ago and I can’t believe the things we’ve done, both with individual goals (Like me publishing books and Levi playing the drums again) and together (Like us creating the exact home and lifestyle we want with our animals, garden, and homesteading activities).

Literally 2 months ago, Levi and I were sitting out front admiring our mini food forest and talking about our next steps. After the honeymoon trip, what do we want to focus on next…

Levi started pointing out spots where he wanted to plant his wine vineyard, and fence off an area for us to get sheep, and pulling up pictures of chicken coops to get for our 4 new chickens.

I thought all of that would take at least a year. Maybe more.

But we took immediate action and turns out, we were totally capable of having it all right now!

Keeping the promises you make to yourself is everything and if you do, you’ll be so surprised how drastically you can change your life in a short time.

Pre-Recording Recipe: Eggs Benedict 🍳🥑

(I love listening to podcasts while I make and eat breakfast every morning, so save this for your next slow morning available!)

Speaking of doing new things, I recently learned how to poach an egg!

And it’s truly amazing and easy. So then I whipped up a hollandaise sauce to recreate a breakfast that I originally thought I’d only be able to get at restaurants which, I do not attend anymore.

Eggs Benedict 🍳🥑

Ingredients:

- One slice homemade sourdough

- ½ avocado

- 1 egg

- Optional: sprouts to top

Ingredients for the hollandaise sauce:

- 3 egg yolks

- 5 tbsp hot melted butter

- A dash of apple cider vinegar

- S + P to taste

Directions:

1. Make the sauce first by first melting butter in a saucepan. Then add to a blender with the rest of the ingredients and blend.

2. Slice sourdough and toast. Slice avocado and smear across toast.

3. Now time to poach your egg! I followed this video that involves adding vinegar to the water and creating a whirlpool in the saucepan before dropping the egg in and leaving it to cook for 3 - 3 ½ minutes.

4. Fish out your egg from the water and place on toast. Drizzle the hollandaise sauce and top with sprouts! (Optional to add red pepper flakes or flakey sea salt or whatever seasoning you want!)

5. Break your egg and watch the perfectly cooked, runny yolks flow out :)
